Cook directly for 5 minutes. Shift the mixture to a double boiler and cook over hot water until it becomes clear. This will take about 45 minutes. Stir as needed.
Serve in bowls. Drizzle fresh cream or coulis over the top if wished.
Tips
Nutmeg, chopped nuts, chopped cherries etc. make great additions as a topping to tapioca if wished.
